Praise be to the Lord for tomatoes!

We have plenty of them, but this year I decided to make sauces, lots of sauces. I got this most amazing tomato saucer and it is soooo GREAT! It is a time saver. You just throw the tomatoes in and watch it make sauce… no seeds, no skin,; beautiful sauce. Then we add diced shallots, onions, lots of garlic, fresh basil, parsley, rosemary, and oregano sauteed to the sauce and bring to a boil for 30 minutes, then simmer until thickened! Then we pour it into our freezer containers and wahlah! Sauce for spaghetti, pizza, minestrone soup, and much more!

And to think we still have hundreds of tomatoes to harvest.

Kelsey is having a blast learning all about preserving tomatoes and helping with every aspect of the harvest… while Austin is more into picking, eating and saucing them. He thinks the “SQUISHER” is so cool!Check out our Giant Atlantic Pumpkin!
It is already about 60-75 lbs…
